Carol,
I took a group to an organic farm in Comala and they were very informative about composting and being able to plant in the climate and how to be environment friendly. I can try to get the info to you.

The garden was beautiful and we ate samples from the garden...orange, purple, carrots and 10 different varieties of lettuce.

Everything was composted and taken care of there.
