New chef & exciting tasting menu at Boca de Iguanas

Boca de Iguanas EcoResort is proud to announce the arrival of our new chef, Fernanda M. Garcia, from the cosmopolitan metropolis of Mexico City.

Chef Fernanda joins us from the hip Hotel Condesa DF and trained at the prestigeous Culinary Institute of Mexico in Puebla, with a specialty in pre-hispanic ingredients and a flair for using fresh local ingredients. She has already been dazzling guests for several weeks with her contemporary Mexican cuisine with a "special twist" and now invites people to sample an inaugural tasting menu this Thurs. Oct. 30.

The cost is only 200 pesos per person, previous reservation required. This is a great chance to feast on a wide variety of the new mouthwatering menu items from Boca de Iguanas Resort.

BOCA DE IGUANAS TASTING MENU

SALAD
-Watercress, snowpeas, greenbeans and red lettuce with amaranth and honey bee vinagrette

COLD SOUP
-Fragrant lemon grass, basil and coconut milk chilled soup

SEAFOOD
-White wine poached blue shelled crab with lime scented rice
-Annatto seed "pastor" fish fillet with Jicama salad
-Fresh local fish fillet steamed in banana leaf and "Sacred leaf" (Piper auritum) with grilled zucchini and guava sauce

Camomille granita to cleanse the palatte

MEAT
-Tender beef medallion with bell peppers, mashed sweet potato and Hibiscus blossom reduction sauce

DESSERT
-Tempura pears with vanilla ice cream and cinnamon syrup
