My Dad did this with his winter home in Florida and it worked for me here. Buy charcoal and leave a bowl in the refrigerator, CAR, and other enclosed areas. The first year we left our car here we had mold inside but when we left charcoal in a bowl, it was great. Also, for stove tops, I paint them with some sort of vegetable oil and then cover with a sheet/towel, whatever. This keeps the rust down. Cover all other small appliances and put your utentils for cooking in a cupboard. Unplug what you can. I live on the ocean and it can be murder on everything. Have your maid come in and clean at least once a week especially on the beach. I now have 10 years experience here trying to keep one step ahead.
