Hi Laurie - You may want to communicate with Nan at www.seatosierra.com. They provide wonderful tours with extrememly knowledgeable folks, and you could easily put together a package with them that would be suited to exactly what you want to do whether it is horseback riding to hidden archeological sites or to hot springs, visiting coffee plantations, visiting small mountain villages, going to a traditional Temescal sweat lodge or just visiting less frequented beaches. Nan's guides speak English and Spanish, so it would give you a chance to practice, as well as break into English when you are stuck but want to know something. Have fun. We live in an absolutely marvelous area.
