I just recently flew my three dogs from Canada to Manzanillo on Alaska Airlines. It was a good experience, costing $100 USD per dog with crate.
You must first find out if there is room on the flight for the dog and what their requirements are in terms of crate size, weight, etc. Also depending on the time you are flying they may or may not accept dogs, for example high traffic times such as Xmas. I was required to have a health certificate completed within 10 days of entering Mexico, a certificate of the rabies vaccine showing in your case it is good until 2011. I did not have to prove a parvo vaccine.
The same for the return.
