cooking advice

I am coming to La Manzanilla in March and want to do some cooking with cheese. I know Mexico has great cheese, but I don't know how to substitute for american types. What would substitute for mozzerella or cheddar or velveeta? I don't think these would be available in La Manzanilla, would they? I would rather not have to go to Sam's or such, although a store in Melaque would be fine, and I would rather use what is readily available. Any advice would be greatly appreciated. Carol
