Sorry did not get back sooner, but no, the oil does not need to be refrigerated. It has a 2 yr shelf life out of the fridge and of course much longer than that if you do keep it cold. The only inconvenience is that it will be solid then and a little harder to use. The Coconut Cream is yummy stuff - mostly it is used in the manufacture of cookies, baked goods, drinks, candies etc. However, it is delicious on toast, pancakes, or in smoothies or to make pina coladas. I use it to make energy balls mixed with ground nuts, shredded coconut, sometimes chocolate, stevia, seeds, greens powder, vanilla, - you only need use your imagination to make all sorts of great stuff. I press the mixture into a plastic container and put it in the fridge to get solid then cut into squares and keep them in a container in the fridge for whenever I have a "sweet craving" Lots of people use the cream to make curries and indonesian food, coconut shrimp or chicken - the list goes on......
