You can buy an electric Brinkmann water smoker for around $50 to $60 USD and bring it down. The element uses 1500 Watts and maintains incredibly even heat for as long as it is needed. It is especially great for fish in Mexico, since fish cooks so quickly, reducing the strain on your electric bill. We have a charcoal Brinkmann water smoker in La Manz due to concerns about the electric bill. I wish I hadn't worried about that and that I had purchased an electric one. If you bring one down for the season and want to unload it, I'll buy it from you. Happy trails.
