Pedro: In a previous part of my life when I was of the vegetarian persuasion I found eating out very easy. Almost any restaurant will serve you some kind of a salad. Ask if the beans are prepared with lard or with oil, does the rice contain lard or chicken broth, order tortillas, salad, beans and make yourself some wonderful soft shell tacos. Enchiladas abound, and then there are juevos rancheros, tortas de queso y aguacate. Occasionally you can find restaurants serving chayote and or squash. Think outside of the menu. Estella's restaurant in Melaque serves wonderful steamed vegetables cooked perfectly with rice and whatever the speials of the day and additionally but not on the menu is that she upon request will whip up a huge wonderful salad as a main course. Kyoto restaurant in Melaque (do I detect a niche market for La Manz here?), anyway Kyoto has excellent vegi cuisine and otherwise at a price that can't be beat.
