Driving to Mexico from Vancouver

We are planning our 1st drive to Mexico around the 1st week of December from Vancouver. I know it's getting a little late to leave but is there any way to avoid potentially snowy mountain passes in Southern Oregon/Northern California? Any tips on managing that concern?
