Lionel and his Healthy Cookies

You may see Lionel on the beach or around town selling cookies that he and his wife Rosa make. Lionel and his family live here in La Manzanilla. He was born up the coast in Tomatlán, has lived in the U.S., and speaks some English. Some may know Rosa as an accomplished seamstress who can alter and fix clothing.. Some people have mentioned that Lionel's cookies are "sugar cookies", but this is not quite true. They do contain cane sugar, but are made of 70% cornmeal, the rest oatmeal, and less than 1% wheat flour, used to flour the pan and form the cookies. Cookies are 5 pesos each.... a low-gluten snack!
