Gluten-free Muffins at Cafe Risa

We had the very tasty gluten-free muffins and coffee this morning at Cafe Risa. The coffee was fantastic as usual, and the muffins are moist and flavorful. Linda is making them with a combination of rice flour, coconut flour, grated coconut, and fruit. Here are Linda the chef and Blanca with the famous muffin! Buen trabajo!
