wheat-free, corn-free 'almost' pizza

Recently I asked the folks at the Jesus, Maria, Jose (and Kate) Restaurant if they would try a new dish for us. Put a layer of rice on a pizza pan, cover it with our favorite topping and bake it! It came out tasting, not like a pizza, but really fun and healthy! Kate says they will do one in small, medium or large if anyone asks for it. They also can make a corn crust, for those just not wanting wheat. cheers!
