I've always been reluctant to try sushi here, because I haven't asked if they use commercially frozen fish or freeze it themselves in their own freezers. Parasites become a concern when we eat raw or lightly preserved fish such as sashimi, sushi, ceviche, and gravlax . Fish need to be frozen to an internal temperature of -4°F for at least 7 days to kill any parasites that may be present. Home freezers are usually between 0°F and 10°F and may not be cold enough to kill the parasites. So now I'm asking, because I really miss sushi! Can you tell me, Carole or anyone else who may know, whether commercially frozen fish is used or home frozen at this restaurant? Thanks for the info. |
