I wasn't thinking poetry I was thinking play on words. There is a name for that
kind of sentence but I don't know it.

Clever D, neither Lois Lane nor I is aware of a term for play on words, except just that: play on words. The closest would be pun, but you weren't being punny.

Run-on Sentences, Comma Splices

The first version was -

Everyone expected the sun to set, but the sunset was unexpected.

I took out the but to make it weirder.........

"When two independent clauses are connected by only a comma, they constitute
a run-on sentence that is called a comma-splice..... When you use
a comma to connect two independent clauses, it must be accompanied by a
little conjunction(and, but, for, nor, yet, or, so)".

7:07 on the bottom & 7:15 on top correct?

I was trying to tell by the amount of wine left in the glass. The glass was
moved with either no sips or one tiny sip difference.

Yeah, that's no help either, the glass was actually emptied and refilled at 7:10 and on it's way down again by 7:15

Salt? Limone? I'm aghast (whatever that means).
You don't need any stinking salt or limone (what was that great actor's name??) All bad comments from old movies aside - I love aroma and taste uncluttered, my personal fave, Herradura Reposado but I also admire the sacred blue bottle.
