I have had two architects from Spain that worked for me. One was from Valencia and she insisted on shrimp, fish and mussels be included. The other was from Sevilla and insisted that it be made only with rabbit, and perhaps a bit of pork sausage. They could have fought to the death over it. I love both versions, and often cross the line with both seafood and chicken.
