Sorry Claire, but there is not enough meat on these pest to do anything.
There's another type of crab that is larger and comes out of the lagoon(I think they call them coconut crabs) later in the rainy season that are a good size and really good to eat . Carlos brought us a bunch a few years back and I have to say I must of eaten too many because we started driving the next day and it was not a pleasant ride that first day. I don't eat them anymore but I can't wait to get my hands on a Dungeness real soon!
