Around here, chacales are fresh-water lobsters, a kind of crayfish, very popular with the locals, and only available in the rainy season, so don't tell anyone. You don't see them on restaurant menus here, but we noticed them advertised up in La Huerta.
A Spanish dictionary may be less helpful in rural areas of Mexico, I'm afraid...
