We recently had the pleasure of attending one of local legend Eileen's cooking classes here in La Manzanilla. We can recommend her classes highly...it's all great fun and the food is muy rico.
This one was themed Modern Mexican. We made Chicken Tinga Sopes, Prawns with Chipotle Goat Cheese Sauce, and Veracruz Cheese Biscuits,. For dessert: individual Coconut Cheesecakes with Raspberry Coulis.
Eileen has a very pleasant manner, and is patient and organized in creating teams to accomplish the kitchen tasks.
Her house is in a lovely setting on the south side of the arroyo. Her yard overlooking the cerro reminded me of a villa in Tuscany.
It's an easy-going way to learn something new and get a tasty lunch out of it too - try it!

My husband and I did this twice last year and loved it. We took our visiting guest they enjoyed it to. It is not just for cooks. My husband doesn't really enjoy cooking, but he really enjoyed the class. Eileen makes it easy to learn and it is a great way to meet others in La Manz. She has a different menu every few weeks, if I remember correctly.
