Chef Couillard is presenting the colorful foods and flavors of Jamaica, Trinidad and the Islands cuisines. Jamaica Jump Up soup, a hot pot of squash, yams, blackbeans and sweet/hot peppers topped with jerk chicken and coconut cream... Charcoal grilled pork tenderloin with red plum chutney... Red snapper with cornmeal and beer batter... Mango icy hot charred octopus... and more!!
